Winemaking process:

 

Fermentation:

In stainless steel tanks.  Two days of cold pre-fermentation maceration at 5º to 6º C, followed by 8 days of alcoholic fermentation with temperatures between 24º and 28º C. Once the fermentation process was concluded, the wine was run off.
Total skin/wine contact time: 11 days.

Ageing process:

30 % of the wine is aged in French oak barrels (of one to three years old).  The rest of the wine is aged in stainless steel tanks.
The malolactic fermentation is realized spontaneously   during its ageing process in barrels or stainless steel tanks.

Filtration Procedure:

The wine is unfiltered and has natural tartaric stability. It may present some natural sediment.

Tasting notes

Our 2009 Cabernet Sauvignon Altacima 4.090 has an intense and attractive red colour.
It is expressive to the nose, with notes of sweet raspberries and cassis in harmony with spicy and slightly toasted touches.
It has a rich structure on the palate that is complemented very well by its fruity and spicy flavours. Its tannins give it character. It has a pleasing finish in mouth.
