The most important point in the life of the wine is the determination of the precise moment of the harvest. In the vineyards our winemakers taste the grapes and decide when the tannins abandon their green, vegetal, astringent state and transform into silky, enveloped and appetising tannins.
The individual bunches of grapes are cut by hand by specially trained people to ensure that only the best grapes reach the winery.
As all the vineyards surround the winery, the maximum distance needed to transport the grapes is 1.5 km . Low speeds and shallow, 15 kg cases are used all the way to the winery to preserve their integrity.
