The Individual Varietal Characteristics
The Cabernet Sauvignon is a powerful wine, dark ruby in colour, with balanced tannins and astringency. It has a full body that involves the wine all around the mouth and intense cassis in its aroma and flavour. The Merlot is luxuriously fruity with soft, very gentle and enveloped tannins. The Syrah is the component that contributes meaty notes and the flavour of blackberries and the refreshing acidity and lively fruitosity of the Petit Verdot brings the whole ensemble to life.
What makes the tannins in AltaCima so round, silky and enveloped?
1- T he grapes are harvested with ripe tannins (micro-terroir).
2- Cold maceration to extract fresh fruit, colour and varietal characteristics in the absence of alcohol.
3- Extractive fermentation raising and moderating the temperature, more in the first half of the fermentation (with less alcohol) and less in the second half, where the presence of alcohol extracts harder tannins.
Batonaje with the fine sediment in the barrels to envelope the tannins.
