The machine room
generates electricity, cold and heat to produce water (drawn from a 36m deep well) at 3 temperatures ( 5°C , 50°C and at high pressure, 95°C ) into 3 separate tanks. This water is pumped through insulated stainless steel pipes to the jackets of the vats and the sanitation points distributed throughout the winery.

The high pressure 95°C water is used for all cleaning purposes, avoiding the use of all detergents.
